4 slices bacon, diced
2 lbs cut up whole chicken
5 sweet Italian sausages
1 white onion chopped
1 lrg clove garlic, finely minced
½ cup fresh parsley
1 lrg can (15 oz) tomato sauce
1 cup dry white wine
1 teaspoon salt
1 bay leaf
7 cups cooked Casserole Pinto Beans
Cook bacon until crisp, drain. Brown sausages and chicken on both sides in bacon drippings and then transfer to shallow baking pan and bake at 375 degrees for 15 minutes.
To remaining drippings add onion, garlic, and parsley; cover and cook over medium heat for about 5 minutes. Add tomato sauce, white wine, salt, pepper, bay leaf and bring to a boil. Pour into large baking dish. Add chicken and sausages and top with bacon. Bake at 375 degrees for 45 minutes.
