1/2 cup all-purpose flour
1 cup packed light brown sugar
1 cup low fat granola cereal
2/3 cup oatmeal
½ cups cooked Casserole Premium Quality Pinto Beans
3/4 cup dark raisins
3/4 cup craisins (cranberry raisins)
1/2 cup chopped almonds
3/4 cup coconut, shredded
7 tablespoons melted margarine
1/2 cup honey
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/8 teaspoon salt
Cooked dried beans for about two hours with a rolling boil (add water when needed). Next, puree the beans until smooth.
In a large bowl combine pureed beans, flour, brown sugar, oats, granola cereal, raisins, craisins, coconut and almonds. Add melted butter, vanilla, cinnamon, salt and honey and mix well.
Firmly press mixture evenly into greased 13×9-inch baking pan.
Bake at 350º F. until bars are browned and firm to touch in center, 20 to 25 minutes. Allow granola to cool completely. Cover and place in fridge overnight.
